Lemon Rice

4 cups chicken stock or broth
2 cups rice
1 stick of butter
2 1/2 teaspoons salt
Juice of 1 lemon (about 2 tablespoons or to taste)
1/4 cup melted butter
dash of white pepper

Bring stock or broth to boil, add rice, butter, salt and pepper. Cook covered over low heat for 15 minutes or until all the liquid is absorbed and rice is tender. Add melted butter and lemon juice. Serve with meat, chicken, yogurt or with a sauce.
